Aging: The grapes were mostly destemmed and fermented rather slowly with two punchdowns daily for 4 weekls. After pressing, the Syrah was in one new and two neutral barrels form 9 months and then racked into all neutral barrels for another 7 months before bottling unfiltered and unfined in March 2015.
